Baked Oatmeal

We are not big fans of oatmeal but usually have it about once a week. Then I found this recipe at Finding Joy In My Kitchen. We still only have it about once a week but we enjoy it a whole lot more. Now I cheat on the frosting and buy pre-made cream cheese frosting. If you want the real deal for Cinnamon Roll Baked Oatmeal Cups click here and you will find the recipe close to the bottom of the page.

BAKED OATMEAL

1 cup quick oats
1/2 cup applesauce
1/2 cup milk
1/2 t vanilla
1 t cinnamon
3 T maple syrup
1/8 t sea salt
Cream Cheese Frosting

Preheat oven to 375 degrees. Combine all ingredients except frosting. Lightly grease two 1-cup bowls, or 4 1/2 cup bowls. Divide oatmeal mixture evenly between bowls, place on baking sheet and bake at 375 degrees for 25 minutes for 1 cup bowls, 15-20 minutes for 1/2 cup bowls. Place large dollop of frosting on each bowl and serve.
