Velveeta Chili Cheese Dip with an Extra Kick

We LOVE queso as a meal occasionally and I have not made it in FOREVER! It's quick, simple and yummy, so what's not to love?

1/4 cup butter
1 serrano pepper, chopped
1/4 cup chopped red onion (approximate measurement)
16 oz velveeta cheese, cubed
15 oz can chili
sour cream, optional

In saucepan melt butter.
Add serrano and onion, cook for 2-4 minutes.
Reduce heat to very low, add the cheese and chili.
Stir almost constantly till cheese is melted. Top individual servings with a dollop of  sour cream if desired.
Serve and enjoy!
