Cajun Breakfast Sandwiches

This is an adaption of a recipe I found at Egg Beaters for Cajun Egg Sandwiches. I pared it down for two people, substituted serrano pepper for the green onion, cut out the hot pepper sauce and added cheese. Everything is better with cheese!

No-Stick Cooking Spray
1/2 cup cut-up turkey smoked sausage
1serrano pepper, chopped
1 small clove garlic, minced
3/4 cup liquid eggs or three whole large eggs
1 1/2 tablespoons milk
Dash ground black pepper
Dash ground red pepper
1/2 of a ten oz can Diced Tomatoes & Green Chilies
2 regular English muffins, split, toasted
4 slices cheese

Spray medium skillet with cooking spray. Add sausage; cook over medium heat 3 minutes, or until lightly browned, stirring occasionally. Add serrano and garlic; cook 1 to 2 minutes, or until garlic is tender.



 Mix liquid eggs, milk, black pepper and red pepper in small bowl until well blended; pour into skillet with sausage; cook until eggs are almost set; stir. Cook an additional 2 minutes, or until eggs reach desired doneness, stirring occasionally.

Meanwhile, drain tomatoes reserving one tablespoon of the juice. Divide tomatoes in half, add reserved juice to one half and put away for future use. Heat other half tomatoes in small bowl in microwave at full power for 30 seconds.

Place one slice of cheese on each toasted muffin half. Spoon about 1/3 cup of the egg mixture over each; top with about 1 tablespoon tomatoes. Serve.
