Freezing Temperatures

John has been quite busy getting us ready for the freezing temps here in McKinney. We have a heat lamp for our "basement" (this is the large storage area at the back of the RV under our bed) to keep the holding tanks from freezing. At slightly below freezing this is all that is necessary. Tonight however it is supposed to get in the low 20's possibly upper teens. So as additional preparation John has made sure our fresh water tank is filled and has disconnected the hose from the faucet and drained the water from it. We will use our fresh water tank for everything we need water for tonight. At bed time we will drain the pipes inside the RV by running the faucets on both sinks with the pump from the fresh water tank off until no more water comes out. So pipes are emptied of water that could otherwise freeze causing the pipes to burst. This is winter in an RV unless you head to Florida or someplace else with very mild winters.

Tonight's dinner was VERY simple but John loved the mashed potatoes so much he said they should def be mentioned on the blog. So here it is.

SIMPLE MASHED POTATOES
Take one pouch from a box of Creamy Butter instant mashed potatoes. Follow directions on box EXCEPT when you add the butter, also add 4 oz pasteurized processed cheese. Proceed as directed on box. Unbelievably easy and yummy.

PORK CHOPS
Heat 2-3 tablespoons oil in skillet. Season pork chops, about 3/4 - 1 inch thick, with salt and pepper. Add to oil cooking for about 3 minutes on each side. Reduce heat, cover and continue cooking till done, about 5-7 minutes.

Easy week night meal that's a hit with the hubby!
