Easy Roasted Yellow Squash and Onion

I found this recipe for Ridiculously Easy Roasted Yellow Squash and Onions over at the Fat Free Vegan Kitchen - Sinlessly Delicious. While the words fat free or vegan don't usually appear on this blog, the words ridiculously easy certainly caught my attention. I was searching for a recipe to roast yellow squash and my search brought me to this oh so simple recipe, destined to be a fav! Mine, of course, is not as healthy with the addition of the cheese, so for a healthier option check out her recipe.

2 yellow squash, large
1/2 yellow onion, medium
nonstick cooking spray
freshly ground black pepper
vegetable magic or seasoning of your choice
shredded cheese

Preheat oven to 425 degrees. Spray baking sheet with nonstick cooking spray. Cut off necks of squash, slice in 1/4 inch slices - if using smaller squash, simply cut in half. Cut remaining squash into 1/4 inch slices and place in single layer on baking sheet. Cut onion into small wedges, pulling layers apart, spread on top of squash. Season lightly with pepper and vegetable magic. Bake for 15 minutes. Turn squash, sprinkle with additional seasoning, return to oven and continue baking for 10 minutes.
Top with shredded cheese, bake an additional five minutes or until cheese is melted.
Serve and enjoy!
