Bacon Chicken Sandwiches


I pinned this recipe for Mini Chicken Sandwiches over at Beyer Beware. They were super yummy and easier to make than I had expected. I started to make only half this recipe, but in the end went with the full recipe putting half away for another time. I added spinach to mine (have to get the green stuff in where I can) but otherwise stuck pretty close to the original recipe.

1 pkg Hawaiian sweet wheat rolls
1 stick butter
1 medium onion, finely chopped
1 Tbsp sesame seeds
1 large tomato, chopped
1 cup spinach leaves, torn
1/2 lb bacon, cooked crisp (I used nine slices but number of slices may vary according to thickness)
1 9 oz pkg delifresh rotisserie seasoned chicken breast
6 slices Swiss cheese

In skillet melt butter till browned. Add the onions and cook until they begin to caramelize. Stir in the sesame seeds.
Then add the tomato and spinach and continue cooking for one to two minutes. Preheat oven to 350 degrees. Split the rolls in half.
Spread the onion mixture over the tops and bottoms of the rolls. Place bottom halves on foil lined baking sheet.

Layer on the chicken, bacon and cheese. Top with the upper halves of the rolls. Fold up edges of foil around the sandwiches. Cover with additional oil. Bake for about 20 minutes.
Serve and enjoy!
