Frozen Breakfast Sandwiches

Although most mornings I have plenty of time to cook breakfast I don't always want to. I have made something similar to these before and they always came in handy. These are very versatile, I like biscuits but you could use bagels or english muffins and whatever type of meat and cheese you like. I did add a bit of  a change to these - spinach and green onion added to the egg. I came across that idea at Finding Joy in My Kitchen: Freezer Friendly Omelet Breakfast Sandwiches.  Big hit and a great way to sneak in some extra veggies!

8 large biscuits, such as grands, baked
8 slices american cheese
8 slices canadian bacon
1 cup liquid eggs or 4 whole eggs, beaten
salt and pepper to taste
splash of milk
1/2 cup torn baby spinach leaves
1 green onion, sliced

Mix together egg, salt, pepper and milk. Spray skillet with nonstick cooking spray and heat over med-lo heat.
Pour egg mixture into skillet.
When egg begins to set top with the spinach and green onion. Work spatula around edge of skillet as you would a large omelet until eggs lose there shine.
Once completely cooked, divide into eight portions - I cut mine like you would a pie. Once biscuits and eggs are both completely cooled assemble the sandwiches.
Cut biscuits open.
Top bottom halves with one slice of cheese, folding corners in to make fit.
Top cheese with canadian bacon.
Add egg and top with the top half of the biscuit.
Wrap each biscuit in plastic wrap, place in freezer safe ziploc bag and freeze. To heat one biscuit unwrap and place in microwave. Heat at 50% power for 2 1/2 to 3 minutes, turning after each minute. Add approx 30 seconds for each additional biscuit up to four. Serve and enjoy a relaxing un-rushed morning!
