Jamaican Jerk Seasoning

This seasoning mix turned out great. It's quite spicy with just a hint of sweetness. I found it HERE and made only a couple of changes according to what I had. This makes about a 1/4 cup of seasoning and is great on chicken, fish, pork or beef.

1 Tbsp minced dried onion
2 tsp dried thyme
1 tsp dried parsley
3/4 teaspoon cinnamon
1 tsp black pepper
1/2 tsp red pepper
1 tsp paprika
1/2 tsp red pepper flakes
1/4 tsp ground cumin
1 Tbsp garlic powder
2 tsp salt
3/4 tsp nutmeg
2 tsp sugar
2 tsp dried chives

Mix together all ingredients. Store in a tightly closed glass jar. It is best if used within a month. A good rule of thumb is 1 - 1 1/2 Tbsp of seasoning per pound of meat.
