Cheesy Beef and Bean Tostadas

4 corn tortillas
nonstick cooking spray
1/2 to 3/4 lb lean ground beef
1/4 cup onion, chopped
1 clove garlic, minced
1 serrano pepper, chopped
1 Tbsp chili powder
salt to taste
1/4 cup water
1/4 cup sour cream
1/2 cup re-fried beans
4 slices American cheese
shredded cheese
avocado
sour cream
salsa

Preheat oven to 450 degrees.
Spray both sides of corn tortillas with nonstick cooking spray, place on baking sheet and cook in oven for five minutes.
Turn tortillas over and return to oven for an additional five minutes. In skillet brown ground beef with onion, garlic and serrano. When ground beef is done add chili powder, salt and water; continue simmering for about five minutes.
Remove from heat and stir in sour cream. On each tortilla spread 2 Tbsp of re-fried beans, top with a slice of cheese and 1/2 cup of the meat mixture. Then top with shredded cheese. Heat for about four minutes in 400 degree oven.
Top with avocado, sour cream and salsa or whatever you like. Serve and enjoy.

  1. Oh, they look so good. I've never made tostadas always making tacos instead, but I'm going to give this a try. Thanks for the idea.
