Spicy Tuna Melts

I am not a big fan of tuna but I really love the blackened tuna salad at Boudreaux's so when I saw this I thought it might be something I would enjoy as well. I found this on Pinterest, you can see the original recipe HERE at Clean Eating. Although I am not ready to put it on my top 10, I must say it was pretty good! I did add a little too much salt and it could of used a little more cayenne pepper but I would make this again with some adjustments to the seasoning.

2 4.5 oz cans solid white albacore tuna, drained
1/3 cup sour cream
1/2 cup broccoli florets, well chopped
2 green onions, thin sliced
juice of 1/2 a lime (about 1 Tbsp)
1/2 tsp chili powder
1/2 tsp ground cumin
sea salt, fresh ground black pepper and cayenne pepper to taste
4 slices thick bread, lightly toasted (I used Texas toast)
1 cup shredded cheese, divided

Preheat oven to 400 degrees. In medium bowl combine tuna, sour cream, broccoli, green onion, lime juice, chili powder, cumin, salt, black pepper and cayenne pepper. Place bread on foil-lined baking sheet. Divide tuna mixture between the four slices of bread and top each with 1/4 cup of cheese. Bake in oven for four to six minutes or until cheese is melted and tuna is warm.
Serve and enjoy!

  1. I love tuna melts, I haven't made them in forever though. My mom used to make the best tuna melts, they were yummy :)

    1. The side dish is Chipotle Corn Salsa. It is very yummy and super easy to make, it is one of our favs.
