The Liebster Award

Since the beginning of the year I have received four nominations for this award from different bloggers. I am truly honored to receive this award and a little shocked to have received it FOUR times in just over a month. WOW! Better be careful, I could end up with a big head, lol.

Eleven Random Facts About Me
1) I am extremely ADD and rely on lists and schedules to help me stay focused, otherwise everything I started would end up only half done.
2) I love being a granny.
3) Life in an RV suits me very well: less to clean, very mobile and just right for two!
4) I love cats but won't have another one because I hate the litter box!
5) I was 21 years old before I got my driver's license even though I took drivers ed at 16.
6) I attended business school for accounting but did not go into a career in accounting. However I have had jobs in which having this education was beneficial, so I wouldn't say it was wasted.
7) I am terrified of snakes, don't care if they are poisonous or not.
8) I enjoy hiking.
9) Attempted selling handmade jewelry for a while, sold very little except to family.
10) The first job I ever received money for was clearing brush and stacking firewood.
11) My husband is my bestest friend ever!!

1) If the world was ending, what would be the last thing you would want to do? 
Spend time with my family.

Good question, never thought about it. The queen of England - I think it would be fun to be royalty for a day.

Any time I get to spend with my honey!

This changes according to my mood but I would have to say the Enchiladas Suizas at Rosario's in San Antonio.

My second husband. The only reason I don't say the first is at least I got two beautiful kids out of that marriage.
8) Favorite beauty product?
Olay Total Effects Wet Cleansing Cloths.
9) Favorite TV show?
NCIS
10) Magazine or good book?
I'd much rather curl up with a good book if I have the time, but I like browsing through magazines for good recipes.
11) Laptop or tablet?
Laptop! Had a tablet - hated it.

Hawaii!

No, I like them on others but have had no desire to get one myself.

Not well enough to have a conversation.

No, I definitely did not inherit my grandfather's green thumb.

My grandmother.

I don't do either well, but I think my singing is a little better.

No, it is the mistakes as well as the successes that have brought me to where I am today.

As a way to keep up with my recipes.
2) What is your favorite season?
Spring.

Playing games on the computer.
4) When you were a kid, what did you want to be when you grew up?
A teacher.

Movie: Double Jeopardy
Type of Movie: Something with a lot of action and maybe a little romance.
6) Do you prefer hot or cold weather?
Hot - but that is changing more as I get older.
7) Do you have any odd habits?
When I wash dishes, I always do them in the same order. I don't like it if I forget something and have to wash it out of order, lol.

Coffee.

Thanksgiving.

Bible - the one book I go back to over and over.

Dogs - no litter box.

Still happily married to the most wonderful man in the world. Enjoying life with family, good friends, good food and refreshing beverages.

Facebook - best way to keep in touch with my girls.

Our next move.

8) What do you do in your spare time?
Blog, play computer games, exercise (rare lately), read, watch tv, go for walks, surf the web, probably other things I can't think of right now, it all depends on weather, mood and who I'm with or if I'm alone.

When I wash dishes, it has to be done in a certain order; I have been following close to this same order since I started washing dishes as a kid.
10) What's your favorite smell?
Baking bread.
11) How many siblings do you have?
Three sisters; two step-brothers.

An awesome cook who is just getting started as a blogger. She was one of my neighbors at the last RV park that participated in our cooking group. So yea, I know first hand this gal can cook!

Christy at The Girl Who Ate Everything
Like me, she didn't start cooking until she married and had someone else to feed. I have been following her blog for over a year and have pinned many recipes and tried several as well.

Rekita at Her and Nicole
I have not been following this blog long, but her posts are always interesting. It is not the typical food blog that I normally follow, it is more of a life blog. Most recently she has shared interviews with her husband and her four year old son. She recently changed the name of her blog, so you may recognize her as "The Lovely Army Wife".

Marguerite at Cajun Delights
This is a blog I have been following for about six to eight months. It was one of two blogs I go to if I want to spice things up with a little Cajun rather than the usual Tex-Mex we have around here.

Evelyn at My Turn For Us
I don't really know how long I have been following this blog. Evelyn is one of those people that is so kind and so open you just feel like you've known her forever.

Beth M at Budget Bytes
This is another blog I have not been following for long. I love the way she takes the time to break down the cost of each recipe. Very helpful when your on a budget, which I think we all are these days.

Katherine at Katherine's Corner
I have been following this blog for some time now. I actually discovered it when one of her co hosts invited me to participate in her linky - Thursday Favorite Things. She is very supportive and helpful to new bloggers. There is even a Blogging Tips section on her blog.

Mrs. Schwartz at Mrs. Schwartz's Kitchen
This blog is fairly new to me but I have already tried a couple of her recipes and loved them. She gives detailed step by step photos for her recipes, which is great for those who are more visual; as well as clear written instruction.

Jamie at Love Bakes Good Cakes
Don't let the name fool ya', there is a lot more to this blog than cakes. Jamie is a homeschooling mom to five kiddos who still manages to find the time to whip up great meals for her family AND share them with us on her blog. That should get her a time management award!

Ladies Heidi, Katie and Sarah at Crock-Pot Ladies
These ladies share recipes for the crock pot that I never would have imagined possible - like bread and cakes. I love my crock pot for no hassle meals and here you can find just about any recipe and it's already adapted to the crock pot for you, no guessing!

Ashley at Kitchen Meets Girl
This is another blog that I have been following for about as long as I have been blogging. For a reluctant cook, she turns out some great recipes. She also shares some funny stories about her family, always great to read, you feel like your catching up with an old friend.

Simple Treats and Two Awards

I must admit that I have been slacking terribly on my blog. Over a month ago I received an award and was quite busy at the time so I put it on the back burner - and then I forgot about it. I received a second award last week which reminded me of the first award. So now that vacation is over and I am settling into my new status as a full-time homemaker, it's well past time that I officially thank these ladies for thinking of me when nominating for these awards. But first a simple treat:

I pinned these Rolo Pretzel Bites months ago over at Glorious Treats. My husband is not a fan of pecans, so I made half with pecans and half with cashews. Also, I the store I was at did not have a bag of just Rolo candies, I had to get a mixture with mini Reeses and Kisses. So although these were not quite like Turtle candies, they were still yummy and easy to make, the hardest part was unwrapping all those little candies!

Preheat oven to 250 degrees. On baking pan spread mini pretzels out in a single layer.
Top each pretzel with one candy. Place in oven for 2-4 minutes (if your using reeses, watch closely, they seem to want to melt more quickly than the others and you don't want them melted, just very soft). Remove from oven.
Press a pecan or cashew half into the top of each candy. Let cool. Serve and enjoy!

Thank you Jamie, so sorry it took me soooo long to accept and pass on this award. If you are not familiar with her blog, you should seriously check it out, she has some AMAZING recipes - not just cakes either!

11 random things about me

1. I am severely ADD, I can't even finish my cup of coffee in the morning without getting distracted by something and then having to reheat the coffee.

2. My natural hair color is brown, not the red it has been for years now.

3. I used to HATE flip flops, now that's all I wear!

4. John is my third (and final) husband, we have been married 8 years now.

5. I have 3 kids, all grown, two girls and one boy.

6. I have 2 grandbabies, one girl and one boy.

7. I live in an RV and love it!

8. I began this blog because I took over my husbands blog for a while and realized the only thing I was really interested in writing about was food, so I decided to start a food blog.

9. Moved a lot when I was a kid, but with the exception of a year and a half in Colorado grew up mostly in the Bastrop - Austin area of Texas.

10.Was known as a monkey growing up, loved to climb trees.

11.My longest lasting career, other than mom, was 12 years as a Juvenile Corrections Officer.

Jamie's 11 questions

1. Who inspires you the most? My husband - he is my inspiration in all that I do, he inspires me to just be me, to take chances and to enjoy life!

2. If you could have dinner with any famous person, past or present, who would you have dinner with? Billy Graham, I think it would be awesome to have a conversation with him over dinner and learn from him first hand.

3. How do you order your steak? Well, I don't order steak very often, I'd rather have seafood or a burger but when I do it's medium rare.

4. What is the one food item that you always have on hand? Serrano peppers, we use these a lot!

5. Do you have a lot of kitchen gadgets and which is your favorite? No, I don't have a lot of gadgets due to the limited space in my kitchen but my fav would be my garlic press.

6. What one dish are you intimidated to make? Baked Alaska, seems like it could go very wrong very easily!

7. Butter - salted or unsalted? Salted.

8. What is your fav kitchen tip or time saver? Tip for silk-free corn from Finding Joy in My Kitchen. Microwave corn, in husks, for four minutes per ear; cut off ends; pick corn up by the top of the husk and give it a few shakes; corn will slide out silk free!

9. Do you call it soda, pop, coke or something else? Soda, very unusual for people from Texas, most call it coke, and I don't know where I picked this up but yep, it's soda or occasionally soda pop.

10. Do you have a regional dish where you live and what is it? In general I would say Tex-Mex but a specific dish I would have to say Fajitas, some consider this a Mexican dish but it is actually Tex-Mex; as well as Nachos and Chili Con Queso.

11. What do you consider your signature dish? That's a tough one, if you were to ask the hubby I believe he would say my Seafood Enchiladas. As far as what I would be expected to bring to a family gathering - my family still doesn't believe I can cook, to them I'm still the one who could barely boil water when I left home, so no expectations there which leaves me free to bring whatever I want. John's family I would say it would be my Hushpuppies, which I have not made in a VERY long time.

6. My first job that I was actually paid for was clearing brush and loading wood for the neighbor of a friend who was clearing their lot to build a house, I was 12 or 13.

Quick and Easy Thai Chicken Salad and The Sunshine Award

This recipe for Quick and Easy Thai Chicken Salad was posted a couple of months ago on a blog I follow - Crumbs and Chaos. This is an amazing blog written by four sisters, you can always find something yummy, quick and easy for dinner!
I made a couple of changes out of necessity - I used orange ginger sauce mixed with peanut butter because our local store did not have Thai peanut sauce; I changed red pepper strips to petite carrots because I do not eat bell pepper of any color. I also added broccoli just because I had some in the fridge, in the future I would not do this, the raw broccoli made this not so great for the hubby. It was soo easy to make and in my opinion super yummy, a definite keeper without the broc!

4 cups packaged coleslaw mix (half of a 16 oz pkg)
1 cup broccoli florets
15-20 petite carrots
1/4 cup Asian sesame dressing
1/4 cup orange ginger sauce
1 1/4 cups cooked chicken, chopped (I used a 7.5 oz pkg carving board rotisserie chicken)
1 Tbsp creamy peanut butter
1 green onion, chopped
2 Tbsp cilantro, chopped
1 lime, quartered

In large bowl combine slaw mix, broccoli, carrots and sesame dressing.
Set aside. In small bowl combine orange ginger sauce and peanut butter till well blended (heat in microwave for 15 to 30 seconds to make this easier).
In medium bowl combine the chicken with the ginger peanut butter sauce. Divide the slaw mix between two plates. Top each with half the chicken, green onion and cilantro.
Serve with lime. Enjoy.

The Versatile Blogger Award

So, what is the Versatile Blogger Award? ”It is a great way to introduce different bloggers to each other and to promote quality blogs readers may not have discovered otherwise.”

I would like to give a big thanks to Anna over at Crunchy Creamy Sweet for selecting my blog. Make sure to pay her a visit, she has some amazing recipes. 

I am both honored and surprised to have received this award as my blog is still in it's infancy at just four months old. Over a year ago my husband began a blog chronicling our adventures living in an RV and gate guarding - On the Road with John and Terry. We stopped gate guarding for about eight months and John lost interest in the blog for a while. I thought I would take it over and did write a few posts but found that I was really only interested in blogging about food - which is not really what his followers were used to, or interested in, reading about. So after much thought, aka procrastination, I decided to start a separate blog that focused mostly on food, whether it be cooking and sharing recipes or sharing info on the restaurants we visit. RV Life and Food was born. Four months later I'm still enjoying blogging and hope to continue for a very long time. Oh, and since we left the storage business in January John has his blog going full swing again,

So narrowing it down to 15 wasn't easy. I decided to stick with food blogs for this, it just seemed the way to go and made it easier to get down to 15. 1. I cannot stand sweet peppers, a pepper without heat is just gross.
2. I did not cook growing up, just a little baking.
3. I am a self-taught cook.
4. I love a good sale on clothes - instead of bragging about what I spent on an outfit, I'd rather brag about how much I saved!
5. I always wanted to learn to play the drums - at least until it dawned on me that I am totally lacking in rhythm. 
6. I love to read. My husband recently bought me a kindle and I have put it to good use.
7. I enjoy making jewelry. I have not made anything recently and hope to get back into it soon.
