Candy Corn Bark

I pinned this recipe for Candy Corn Bark from Diana Rambles a while back. There are so many different variations you could do with, many of them are posted on her blog. It is super yummy! I would however recommend that you use a cookie sheet liner rather than spraying the pan with a nonstick cooking spray. I used the spray and the bark stuck. If this does happen to you though just take a second pan and put hot water in it then set then pan with the bark on top of the hot water. The heat will loosen it right up.

1 sleeve +/- saltine crackers
1 cup butter
3/4 cup brown sugar
12 oz pkg semi sweet chocolate chips
candy corn
dry roasted peanuts

Preheat oven to 400 degrees. Line sheet pan with cookie sheet liner or spray with nonstick cooking spray.
Arrange crackers to cover the bottom of the pan in  a single layer. My pan held one sleeve crackers perfectly (15 1/2" x 10" x 1"). You may need more or less crackers depending on the size of your pan. In small saucepan melt the butter, add brown sugar and boil for about three minutes stirring constantly. Pour over the saltines and put in the oven for five minutes. Remove from oven and sprinkle chocolate chips on top.
Once the chocolate chips appear glossy, spread the melted chocolate chips evenly over the saltines.
Sprinkle with desired amount of candy corn and peanuts, press in place. Refrigerate for about one hour or until hard.
Break apart and enjoy!

Christmas Treat Bags

I pinned this easy recipe for Crock-Pot Snowman Poop (Cake Mix Puppy Chow) a couple of weeks ago from Crock-Pot Ladies. I decided to use this recipe to make treat bags to take to my sister's at Christmas. The kids loved them (and so did most of the grown kids). Here is what you will need:

8 squares of white bark
12.25 oz box of honey flavored O shaped cereal
15.25 oz box funfetti cake mix (the funfetti mix adds little bits of color, but is not as noticeable as you would think, so any white cake mix will do)

assorted Christmas candies
plastic snack sized zip bags
plastic wrap
curling ribbon

I used a 4 qt crock pot for this, but it was filled to the brim making mixing difficult. I recommend using a 6 qt if you have it but the 4 qt is doable.
In crock pot melt white bark on high heat, stirring occasionally. This should take less than an hour, mine took 30 to 40 minutes.
Stir in the entire box of cereal and keep stirring until all of the cereal is well coated with the melted bark. Then slowly add the cake mix while continuing to stir, coating all of the cereal with the cake mix.
Spread out on waxed paper to cool. Once cool put about half a cup of the snowman poop into a snack sized zip bag. Place the snack bag and several pieces of the Christmas candies into the center of a large square of plastic wrap. Bring the corners together and tie with the curling ribbon. Then simply curl the ends of the ribbon.
You can dress these up more but I was doing this last minute and had to use what was available at the store two days before Christmas!

Super Creamy, Super Simple Fudge

I made this fudge the first time last year and when I went to make it was surprised I had never posted it on my blog! This is the easiest fudge ever! Two ingredients with a third optional ingredient being an add-in of your choice. I made two kinds of fudge to take to my sister's for Christmas and everyone loved it!! Here is the basic recipe:

1 tub frosting
12 oz pkg of candy chips (such as chocolate, peanut butter, etc)
1 cup of add-ins (such as nuts or dried fruit)

Remove lid and foil lining from frosting and melt in microwave for 30 seconds to one minute, depending on your microwave. Most household microwaves will only take 30 seconds. You want the frosting to be melted enough to be pourable. Then pour the chips into a mixing bowl and melt, again for about 30 seconds to one minute. You do not want the chips to melt completely, just till they have a nice shine. Pour the frosting in with the chips and stir until the chips are completely melted. Stir in your add-ins. Pour into a buttered 8"x 8" pan and place in fridge until firm. Take out of fridge about an hour before serving to make cutting easier. Serve and enjoy!

Here is what I did this time:

fudge frosting + milk chocolate chips + salted and roasted pecans




buttercream frosting + butterscotch chips + salted and roasted cashews




Both turned out very yummy! You can also do layers with this fudge, but you will need to use a larger pan like a 10" x 10". Make your first layer, let it set in fridge till firm. make the second layer and pour over the first. Return to fridge till firm.

One of these I have done before was:
dark chocolate frosting + semi sweet chocolate chips (no add-ins) for the first layer
peanut butter frosting + peanut butter chips (no add-ins) for the second layer

Simple Treats and Two Awards

I must admit that I have been slacking terribly on my blog. Over a month ago I received an award and was quite busy at the time so I put it on the back burner - and then I forgot about it. I received a second award last week which reminded me of the first award. So now that vacation is over and I am settling into my new status as a full-time homemaker, it's well past time that I officially thank these ladies for thinking of me when nominating for these awards. But first a simple treat:

I pinned these Rolo Pretzel Bites months ago over at Glorious Treats. My husband is not a fan of pecans, so I made half with pecans and half with cashews. Also, I the store I was at did not have a bag of just Rolo candies, I had to get a mixture with mini Reeses and Kisses. So although these were not quite like Turtle candies, they were still yummy and easy to make, the hardest part was unwrapping all those little candies!

pecan halves

Preheat oven to 250 degrees. On baking pan spread mini pretzels out in a single layer.
Top each pretzel with one candy. Place in oven for 2-4 minutes (if your using reeses, watch closely, they seem to want to melt more quickly than the others and you don't want them melted, just very soft). Remove from oven.
Press a pecan or cashew half into the top of each candy. Let cool. Serve and enjoy!

1. I am severely ADD, I can't even finish my cup of coffee in the morning without getting distracted by something and then having to reheat the coffee.

2. My natural hair color is brown, not the red it has been for years now.

3. I used to HATE flip flops, now that's all I wear!

4. John is my third (and final) husband, we have been married 8 years now.

5. I have 3 kids, all grown, two girls and one boy.

8. I began this blog because I took over my husbands blog for a while and realized the only thing I was really interested in writing about was food, so I decided to start a food blog.

9. Moved a lot when I was a kid, but with the exception of a year and a half in Colorado grew up mostly in the Bastrop - Austin area of Texas.

10.Was known as a monkey growing up, loved to climb trees.

11.My longest lasting career, other than mom, was 12 years as a Juvenile Corrections Officer.

1. Who inspires you the most? My husband - he is my inspiration in all that I do, he inspires me to just be me, to take chances and to enjoy life!

2. If you could have dinner with any famous person, past or present, who would you have dinner with? Billy Graham, I think it would be awesome to have a conversation with him over dinner and learn from him first hand.

3. How do you order your steak? Well, I don't order steak very often, I'd rather have seafood or a burger but when I do it's medium rare.

4. What is the one food item that you always have on hand? Serrano peppers, we use these a lot!

5. Do you have a lot of kitchen gadgets and which is your favorite? No, I don't have a lot of gadgets due to the limited space in my kitchen but my fav would be my garlic press.

6. What one dish are you intimidated to make? Baked Alaska, seems like it could go very wrong very easily!

7. Butter - salted or unsalted? Salted.

8. What is your fav kitchen tip or time saver? Tip for silk-free corn from Finding Joy in My Kitchen. Microwave corn, in husks, for four minutes per ear; cut off ends; pick corn up by the top of the husk and give it a few shakes; corn will slide out silk free!

9. Do you call it soda, pop, coke or something else? Soda, very unusual for people from Texas, most call it coke, and I don't know where I picked this up but yep, it's soda or occasionally soda pop.

10. Do you have a regional dish where you live and what is it? In general I would say Tex-Mex but a specific dish I would have to say Fajitas, some consider this a Mexican dish but it is actually Tex-Mex; as well as Nachos and Chili Con Queso.

11. What do you consider your signature dish? That's a tough one, if you were to ask the hubby I believe he would say my Seafood Enchiladas. As far as what I would be expected to bring to a family gathering - my family still doesn't believe I can cook, to them I'm still the one who could barely boil water when I left home, so no expectations there which leaves me free to bring whatever I want. John's family I would say it would be my Hushpuppies, which I have not made in a VERY long time.

Fudge for One

Christmas 2008 my mom compiled many of her amazing recipes, my pops typed them up and printed them out, then they were put into books for my sisters and myself. This is one of those recipes. Yummm!! If you love all things chocolate the way I do this recipe is extremely dangerous. Fudge I can make in under five minutes and have all to myself? Oh yeah!

1/3 cup sugar
1 heaping Tbsp cocoa powder
1 Tbsp + 2 tsp milk
1 Tbsp butter
1tsp vanilla

In one quart glass mixing bowl combine sugar, cocoa and milk. Microwave on high for one minute. Stir, scraping sides of bowl clean. Microwave on high for an additional 40 seconds. Add butter and vanilla. Beat for about two minutes.
Pour into buttered dish. Enjoy immediately or allow to cool in refrierator for about an hour.

Shanna's Toffee



Well I did manage to get one of the recipes from my sister.The second one is top secret and she does not share it. Here she is with our mom:
She did not actually make the toffee herself, a friend made it. I have not made it myself yet, but it seems simple enough. The Recipe:
1 c butter
1 1/4 c sugar
1/2 c chopped nuts, although you can use any it was really yummy with salted peanuts
1/2 - 1 c chocolate bark, chopped

Melt butter, add sugar and boil to 300 degrees. Add nuts. Pour onto buttered foil-lined baking pan. Sprinkle the chocolate on top while still warm. Allow chocolate to sit for a minute to soften, the spread. Let cool, break into pieces and enjoy.

Dark Chocolate Mint Bark

I believe this is the simple version of chocolate covered pretzels. Found this yummy recipe at Finding Joy in My Kitchen. This only varies slightly from her recipe for Mint Chocolate Bark. She uses Hershey's Mint Chocolate Chips. I used Nestle Dark Chocolate and Mint Chips, partly because I could not find any hershey's mint chips and partly because I LOVE dark chocolate. Enjoy!

1 1/2 cups dark chocolate and mint chips
1 cup pretzels, chopped


Place chocolate chips on foil lined baking sheet. Heat in 300 degree oven for about five minutes or until chocolate chips are soft.






Spread chocolate into thin sheet. Top with chopped pretzels. Gently press pretzels into chocolate. Let cool on counter until chocolate becomes firm, about two hours. Break into pieces and enjoy. If there is any left, seal in airtight container.
