Taco Quesadillas

1/2 lb. lean ground beef
chili powder
minced onion
sea salt
4 six-inch flour tortillas
1 green onion, chopped
1 serrano pepper, chopped
shredded cheddar cheese
guacamole

Brown ground beef; season to taste with sea salt, chili powder and minced onion. Spray skillet with non-stick cooking spray. Place one tortilla in skillet, top with about two tablespoons of shredded cheese, chopped onion and serrano. Heat in skillet until cheese begins to melt.
Top half of the tortilla with meat mix and the other half with two small dollops of your favorite guacamole. Continue heating for about one minute.
Fold in half and serve with guacamole and chips. NOTE: If you would prefer less meat on your quesadillas, this could be divided between six tortillas.
