GREEN BEANS
4 oz fresh French beans
1 T olive oil
Dash sea salt
Dash of garlic powder
1/4 t Italian seasoning
1/2 t minced onions
Rinse beans. Heat oil in skillet. Add beans and seasonings. Cook for about 2 minutes.
CHICKEN PASTA
8 oz Rigatoni
1 large boneless skinless chicken breast
2 T olive oil
1/2 t sea salt
1/2 t garlic powder
1 t Italian seasoning
Salad dressing of your choice
Cook rigatoni according to directions on package. Cut chicken into one inch pieces. Heat oil in skillet. Add chicken to oil and season with. salt, garlic and Italian seasoning. Cook till done. Drain pasta and divide on two plates. Top with chicken and about 2 T of salad dressing. I like Greek dressing, John uses Ranch.
Now you may wonder - why salad dressing? Well on rare occasions I will make this using Alfredo sauce. I don't do this often because of all the fat in Alfredo sauce plus when I use it I positively drown my chicken and pasta with it. So this way I cut some fat and calories AND can actually taste the chicken and pasta. It's also something simple and always on hand.
