Quick Quesadilla

I know you see these recipes for quesadillas EVERYWHERE on the web but still I thought I would throw this recipe out there. After all quesadillas are awesome! I like making mine on the stove top, they come out nice and crispy in a short amount of time. This is the perfect lunch for me while John is working. Yumm!
1 8" whole wheat tortilla
shredded cheese
pico de gallo (or whatever you like on your quesadilla)
sour cream, optional - for dipping

Spray skillet with nonstick cooking spray. Heat over med heat.
Place tortilla in skillet and top with cheese leaving a 1/2 to 1 inch border. Continue heating till cheese begins to melt.
Top one half of tortilla with pico de gallo, or desired toppings.
Fold tortilla in half and continue cooking till brown and crispy. Flip over and brown the other side.
Cut into wedges. Serve and enjoy!
