I found this recipe for Sweet Chicken Bacon Wraps over at Jam Hands back in September. I finally got around to making them Friday night. They were very yummy! I grilled mine rather than broiling but other than that I stuck to her recipe. I love the sweet and savory combo with just a little spice; right up our alley!!
2 large boneless, skinless chicken breast
7 slices of bacon, cut into thirds
2/3 cup brown sugar
2 Tbsp chili powder
Cut chicken into small bite-sized pieces. Wrap one of the bacon pieces around the chicken. Mix together brown sugar and chili powder in small bowl. Dredge wrapped chicken pieces into sugar mix.
Place on grilling pan that has been sprayed with nonstick cooking spray. Heat grill to medium (not on high - it will catch fire - voice of experience). Place pan on grill, close lid or cover, and cook for five minutes on each side or till bacon is nice and crispy.
Serve and enjoy!!
