Well the chicken fajitas ended up being pork fajitas after I did my shopping. The local HEB had pre-seasoned fajita meat on sale (pork, beef and chicken) and with it you could get chips, beans, shredded cheese and salsa all for FREE. When I looked at the meat though the beef and chicken were all in 4+ pound pkgs, I didn't need that much. I ended up settling for a 2.5 pound pkg of the pork, which will end up making two meals for us, actually four with leftovers from each dinner meal. Now I have had problems in the past with the pre-seasoned beef being tough, so I took precautions and still marinated it in a fajita marinade that I had on hand. These came out very tender!
2 Tbsp canola oil
1 1/4 to 1 1/2 lbs pre-seasoned pork for fajitas
fajita marinade
1 to 2 large jalapenos, cut into strips
1 small white onion, cut into wedges
flour tortillas
sour cream
guacamole
salsa
Cut pork into strips and place in plastic zip bag. Add just enough marinade to coat the meat and allow to sit in fridge for at least 30 minutes.
Heat oil in large skillet.
Add the pork and cook until almost done.
Stir in the jalapenos and onion. Continue cooking until onions are crisp - tender and pork is completely done.
Serve with warm flour tortillas, sour cream, guacamole and salsa or whatever toppings you like. Enjoy!

ReplyDeleteI also have an HEB fajita packet...I like to cook mine, no matter what meat, in the dutch oven with potatoes, veggies, and some salt and pepper and olive oil...it is amazing! But im eating it so much I think I'll try it the eay it's "supposed" to be eaten.
Oooh! I think potatoes in this would be awesome! I never do fajitas the way your "supposed" to because I REALLY don't like sweet peppers.
