I found the recipe for these fries HERE. They called them Spicy Sweet Potato Wedges but they were not really all that spicy, very crunchy though. We love sweet potato fries and these are the first I have made that I really like!
1/4 cup liquid egg or 1 whole egg, beaten
1 packet seasoned coating mix for chicken (shake-n-bake)
1 Tbsp brown sugar
1/4 tsp red pepper
1 large sweet potato, about 1 lb
Cut sweet potato into wedges for fries. Pour egg into large plastic zip bag. In a second zip bag mix the coating mix, brown sugar and red pepper.
Dip potato wedges into egg, then place in bag with the seasoned coating mix and shake until well coated. Preheat oven to 425 degrees, 400 degrees for RV ovens. Line baking pan with foil, then spray with nonstick cooking spray.
Spread potato wedges evenly on pan and bake for 25 to 30 minutes. Serve and enjoy!
