1 medium tomato, chopped (about 1 cup)
1/3 cup red onion, chopped
1 serrano pepper, chopped
1/4 cup snipped cilantro leaves
1 Tbsp apple cider vinegar
2 Tbsp lime juice
salt and pepper to taste
Combine all ingredients and refrigerate for one hour or more. Serve with your favorite Mexican dish and enjoy!
