Pork Chops with Apples and Stuffing

I have not made this recipe in at least two years, not since we moved into the RV. For whatever reason I've just never tried making it for two. This recipe originally came from Stove Top Stuffing. It's one of those keepers that the whole family loves and is very easy to make.

1/2 cup water
1/2 Tbsp butter
1 cup stuffing mix
nonstick cooking spray
1/2 21oz can apple pie filling
2 boneless pork chops, 3/4  - 1 inch thick

Preheat oven to 375 degrees. In small saucepan bring water and butter to boiling. Stir in stuffing mix, remove from heat and set aside. Line baking pan with foil and spray with nonstick cooking spray.
Spread apple pie filling in bottom of pan.
Top with the pork chops.
Spoon prepared stuffing on top of the pork chops. Bake covered for 30 minutes, uncover and continue baking an additional ten minutes or until chops are done.
Serve with salad and enjoy!

  4. I might have to try this. I just not usually fond of sweet with pork. I know it is popular with pork. It sounds wonderful and easy.
