Best Breakfast Tacos Ever!

With John and I being on opposite schedules right now, he works 3am-3pm and I work 3pm-3am, I typically only cook one meal a day. When I wake up, around 11:30am, I cook our afternoon meal. But about once a week I will make a batch of breakfast tacos and put in the fridge for us to grab whenever we want. In our house breakfast tacos aren't just for breakfast. I believe these are the best I've ever made! The sweetness of the sausage made a big difference! I normally buy spicy sausage but this time decided to get maple flavored sausage, I may never go back to spicy! This is also the first time I've used hash brown patties instead of southern style hash browns. I think I like these better as well. Much easier to cook and the crumbled bits are much smaller than with southern style or regular has browns. I'm actually grabbing one of these right now!

3 hash-brown patties
1/2 lb maple flavored sausage
2 serrano peppers, chopped
1 green onion, chopped
1 1/2 cups liquid eggs (6 large eggs)
milk, salt and pepper
8 flour tortillas

Heat hash- brown patties in microwave for two minutes and set aside. 
In skillet brown the sausage.  While sausage in browning, mix a splash of milk (about 2 Tbsp) with the eggs, season to taste with salt and pepper. When sausage is done add the serranos and green pepper, continue cooking for 1-2 minutes. Crumble the hash brown patties into the sausage.
Stir in the eggs and continue cooking until eggs are done. Remove from heat and allow to cool. 
Divide mixture between the eight tortillas. Wrap each individually in foil.
Refrigerate until ready to eat. To reheat, remove from foil, wrap in paper towel and heat in microwave for 30 seconds, turning halfway through. Or you could eat them straight out of the fridge - that's what John does! Enjoy!

  1. I love the idea of breakfasts that can be done ahead .... I'm not much of a breakfast eater, so I lack the motivation to actually make something more than toast most days! However, if I had something like this on hand, I would probably grab one :)
