1/2 tsp olive oil
1/2 lb lean ground beef
1/2 of a red onion, chopped, about 1/2 cup
2 Tbsp jalapeno, chopped
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp oregano
dash of red pepper flakes
sea salt and freshly ground black pepper to taste
3/4 cup black beans, rinsed and drained (left over from the corn I made yesterday)
6 flour tortillas
shredded cheese
In skillet heat the oil over medium heat.
Add the ground beef, breaking up. Add onion, jalapeno and spices. Cook till ground beef is done.
Stir in black beans, heat through. Set aside.
Preheat oven to 425 degrees. Line baking pan with foil and spray with nonstick cooking spray. On each tortilla sprinkle one to two Tbsp shredded cheese down the center.
Then top with 1/2 cup of the bean and beef mixture. Roll up and place seam side down on foil lined pan. Once you have rolled all the tortillas, spray each with additional nonstick cooking spray. Bake for 5-6 minutes, turn over and bake for an additional 5-6 minutes.
Mine were not quite browned after baking, so I placed them under the broiler for 1-2 minutes on each side. Serve and enjoy!
