Cilantro Lime Shrimp served over Cilantro Lime Rice

This dish was super yummy and super easy to make, which is good because with John being off yesterday for the holiday we ended up going on one of our adventures, so dinner got started a little later than usual. Of course I forgot to take pics until the plates were ready to serve, so here is the pic of the final product:
But now I must back up a little bit to our adventures. We were out running errands and stopped for lunch at Carl's Jr. Neither of us had ever eaten at a Carl's Jr before - the burgers were awesome! While eating we decided to see what State Parks were in the area and go for a drive. So back home we went to pick up the faithful dog and head out. We decided on Guadalupe River State Park which is about a one hour drive from us. We checked out the park, the camping accommodations are about average for a state park in Texas, the day use area was really nice, right on the river. This is where most of the people visiting the park seemed to be. Lots of people swimming and having a good time. After leaving there we decided we would stop and look at some travel trailers. We had discussed the idea of buying a travel trailer as opposed to a fifth wheel or motor home AND we found the perfect one! It is very solidly built, which is important for full-timing and has everything we have been looking for and then some. Nice kitchen area, comfortable living room, closet space, two AC's (very important for summers here in Texas) and BONUS - an outside kitchen where you can flip the TV around from the LR inside, and watch TV outside! 
They offered us a great deal both on the price of this trailer and on our trade-in. We still opted to sleep on it, pray about, talk out the pros and cons; we didn't want to jump in and buy it right off the bat without taking a moment to step back and catch our breath first. John called them this morning with a thumbs up, so unless something goes awry, like the final numbers not matching the quote we were given yesterday, we should be in this by this time next week! Yippee!!!! That was our Labor Day adventures. What adventures did you have this weekend?

Ok, so back to the super yummy, super easy shrimp and rice. These are two separate recipes found on two separate blogs that I thought would work well together and they did! I found the Cilantro Lime Shrimp about four months ago over at The Girl Who Ate Everything. Then more recently, about two weeks ago I found this Cilantro Lime Rice over at The Fearless Homemaker. They paired together nicely and are definitely worth a try!! Here is my twist on their recipes:

Cilantro Lime Rice
1 cup long grain rice
1 Tbsp lime juice
3 Tbsp chopped fresh cilantro
1 Tbsp canola oil
Cook the rice as you normally would. Stir in remaining ingredients. Set aside.

Cilantro Lime Shrimp
1 tsp olive oil
1/2 lb small shrimp; cooked, deveined, tails removed
salt, pepper and red pepper flakes
2 cloves garlic, minced
lime juice
1/4 cup chopped fresh cilantro
In skillet heat oil. Add shrimp and season to taste with salt and pepper. Stir in a dash of red pepper flakes and the garlic. Continue cooking for about two minutes, just until shrimp is heated through. Remove from heat, drizzle with lime juice and stir in the cilantro. Serve over the cilantro rice and enjoy!

    2- Love the travel trailer.
    3-Is it the same size as the one you hsve now?
    4- We have been looking at passports 28 feet. Hoping for one next year.

    1. Total length is about the same but without the driver/passenger chair and doghouse for the engine the new one is MUCH roomier. Plus we have 3 slide outs now, the old one had none. We can actually walk past each other!
