Bacon Pancakes

Yummy! I love bacon with my pancakes, had never thought of putting the bacon, whole slices - not crumbles, in my pancake. I got the recipe from Moms Crazy Cooking, she always has great recipes. When I saw these pancakes I knew I had to make them.

1 1/3 cups of pancake batter of your choice

4 slices of bacon, fully cooked, I used jalapeno bacon

Pour 1/3 cup of pancake batter into a hot skillet sprayed with non-stick cooking spray. You want to make the pancake elongated rather than round, then press a slice of bacon into the batter.

Cook until edges are dry. Flip carefully - my first one the bacon folded slightly as I flipped it.

Continue cooking on other side till done.

Serve with syrup and enjoy!
