Thai Chicken Pasta

Found this yummy sounding recipe for Thai Chicken Pasta a couple of months ago over at The Blonde Muse. When mixing the sauce I had a little touch of doubt as to how it was going to turn out and completely forgot to take pictures until it was completely done and ready to serve. My doubts by the way were TOTALLY unfounded. This was even better than I thought it would be when I originally pinned it. Just goes to show that you should stick with your first impression! I cooked more chicken than this recipe called for so I increased the other ingredients accordingly.

5 oz linguine
3/4 cup salsa
3 Tbsp creamy peanut butter
1 1/2 Tbsp orange juice
2 1/4 tsp honey
1 1/2 tsp hoisin sauce
1 1/2 cup cooked chicken
roasted salted peanuts and fresh snipped cilantro for garnish

Cook linguine according to directions on package. Meanwhile, in microwave safe dish mix together salsa, peanut butter, orange juice, honey and hoisin sauce.
Cover an heat on high for one minute, stir and heat for an additional 30 seconds. Add chicken and heat through. Drain linguine and serve topped with chicken mixture.
Garnish with peanuts and cilantro. Enjoy!
