Stuffed Sirloin with Mushroom Sauce

This was the entree for our Valentine's Day dinner. Yes that has been a while back, I have thought of posting it several times but just keep putting it off in favor of something else. This steak was magnificent! I am not a huge steak fan, but these were great. I found the original recipe for Stuffed Filet Mignon with Sherry-Mushroom Sauce at Cajun Delights. I made a couple of changes - no sherry and a different steak, some different measurements on other ingredients but for the most part I followed their recipe. YUMMY!

The Steaks
2 Tbsp olive oil
2 (8-12 oz ea) top sirloin steak, thick cut
salt and pepper to taste
4 oz cream cheese, softened
1/2 cup shredded parmesan cheese
1 clove garlic, minced
2 tsp dried parsley

In small bowl mix together the cream cheese, parmesan cheese, garlic and parsley.
Cut a slit into the side of each steak to form a pocket.
Fill each with half the cream cheese mixture. Season the outside of the steaks with salt and pepper if desired. Preheat oven to 350 degrees, 325 for RV ovens. In large skillet heat oil. Add steaks and cook for 2-3 minutes on each side over medium heat.
Transfer steaks to a baking pan that has been lined with foil, leaving drippings in the skillet. Bake for 15 minutes or to desired doneness. Remove steaks from oven and let rest while making the sauce.

The Sauce
2 Tbsp butter, divided
1 cup sliced baby bella mushrooms
2 green onions, chopped
1 clove garlic, minced
1 tsp cajun seasoning
3/4 cup beef broth
2 tsp cornstarch
2 tsp water
lemon wedges, optional

Add one Tbsp butter to drippings in skillet.
Add the mushrooms, green onions and garlic. Saute for three minutes then stir in the broth. In a small, bowl combine the cornstarch and water, stirring until smooth.  Add the cornstarch mix to the skillet and bring to a boil. Cook for one minute, stirring constantly. Remove from heat and add the remaining Tbsp of butter, stirring until butter is completely melted. Spoon the sauce over the steaks.
Serve with lemon wedges and enjoy!

    1. That's funny! I thought this was a great meal to make the day feel special without going to a crowded restaurant. I guess great minds do think alike!
